Beer (well, good beer anyway) is made from 4 main ingredients, water, barley malt, hops and yeast.
Yeast
Each brewery uses it's own unique strain of yeast. It is propagated from one brew to the next.
Water
Water is known to brewers as 'liquor' Most breweries had their own wells, although this was frequently supplemented from the public water supply.
The water at Darley's was 'Burtonised' by the addition of certain salts.

Malt

Malt is made by steeping barley in water, allowing it to germinate and then roasting it to varying degrees, depending on the type of malt required. . The malt is then delivered to the brewery and placed in the malt store

Hops

Hops were delivered in sacks known as 'pockets' and were stored in a temperature controlled environment
