Racking/Priming/Fining

After fermentation was complete the brew (now known as 'green beer') was run into the racking tank from which the casks were filled Once filled each cask was 'primed' and 'fined'.

Priming was the addition of a small amount of sugar solution into each cask to allow a secondary fermentation to proceed in the cask, producing what is commonly known as 'real ale', but known as 'cask conditioned ale' in brewing terms.

Finings were added to help the naturally cloudy beer to clear whilst settling in the pub cellar. The priming and fining areas are shown below
