From the Paraflow cooler the wort was run into the fermenting vessels. Darley's used slate fermenting vessels for all their brews. These were not of the 'Yorkshire Square' type (i.e. having two chambers with a 'chimney' between them), but were simply open fermenters. There were some Yorkshire Squares at Darley's but they were only used for water storage, not for brewing. Yeast was added to the cooled wort and the slow process of converting the sugars into alcohol and carbon dioxide began. This lasted for several days.

The cylindrical green tank seen in these pictures was used to skim the yeast off the surface of the fermenting brew. In the picture above the device in the lower right foreground was the yeast press.
