The Copper

The wort was run from the mash tun into the copper, where it was boiled for about an hour. During the boil hops were added to add bitterness to the beer and to act as a preservative.

I believe the copper at Darley's was the last 'all copper' made copper in the country when it was installed in ?1957.

This is a view of the area directly underneath the copper. The vessel shown is known as the 'hop back', a circular tank with a slotted base.

Another view of the hop back. Following the boil the contents of the copper were allowed to fall into the hop back, and the boiled wort was allowed to drain through the hops which had settled on the slotted base
